Baked Parmesan Tomatoes



Here's a great way to use up those delicious tomatoes that you may have in your garden. These are quick, easy and could be used as a side dish or a healthy afternoon snack.


I added my own twist by using basil in addition to oregano. And really, this recipe could be modified in so many ways. I'm thinking of adding different cheeses like mozzarella and maybe even some pesto sauce.


Baked Parmesan Tomatoes (originally from EatingWell)

4 Tomatoes, halved horizontally
1/4 cup fresh grated Parmesan cheese
1 tsp chopped fresh oregano or/and basil
1/4 teaspoon salt
Freshly ground pepper, to taste
4 tsp extra-virgin olive oil

1. Preheat oven to 450F
2. Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano/basil, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
